when you draw off hot water the storage vessel cools and the boiler runs to reheat the vessel as more cold water fills it. This is usually the block on the right of the combustion chamber.
When you ask for More water one option is a bigger boiler, another an unvented hot water cylinder, if your mains supply is not adequate then maybe you need an accumilator
a sealed kit is used to make the boiler a sealed system boiler, this boiler must by definition already have a kit fitted. It is the red discus in the front of the boiler.
